Ikon 7" Chinese Chef's Knife

I was surprised how easily it glides through dense squash—the blade's height gives you real knuckle clearance, and the balance feels perfect for all-day prep.

The weight of the forged steel does most of the work, so slicing cabbage takes almost no effort. It's heavy compared to my old slicer, but the control on wafer-thin cuts is worth it.

I was worried a Chinese cleaver would feel clumsy, but this one has real heft without tiring my wrist. Went through a whole cabbage and a pile of onions in minutes, and the thin slices came out shockingly even. The forged blade just feels solid in a way my old stamped knife never did.
