The WÜSTHOF Classic 7" Hollow-Edge Chai Dao combines the shape of a Santoku with that of a Chinese chopping knife. However. it adopts not only the form. but also the functionalities of the two models. Thanks to the slightly curved shape of the blade. the Chai Dao is suitable for both cutting and chopping. especially for a fluid rock-chop. As this knife is particularly finely ground towards the cutting edge it should not be used for chopping bones; instead we recommend our European Cleaver or Butchers Knife.

Claire X. ★★★★★

I’ve been using this knife to prep garlic and ginger for stir-fries, and the hollow edge keeps food from sticking to the blade beautifully. It’s surprisingly nimble for a chopping knife.

Owen ★★★★★

The hollow edge really does keep potatoes from sticking, which I didn't expect to notice so much. It's heavier than my old santoku but the extra weight does the chopping for you. Been using it for everything from cabbage to chicken.

Michael ★★★★★

I've been using this as my main knife for everything from breaking down a chicken to mincing garlic, and the curve of the blade makes rock-chopping feel effortless. The weight took a day to get used to, but the hollow edge keeps potatoes from sticking like my old santoku did.
