This thing plows through a block of aged cheddar without me having to brace the board with my other hand. The blade holds its edge well, and I've started using the fork tip to just stab the last slice straight onto the plate.

I was skeptical a knife could make that much difference with aged parmesan, but this one cuts through it without crumbling the block. The blade feels sturdy and the sharp edge slices clean, and I use the fork tip to move pieces straight to the plate.
